    Chill the blood oranges, sparkling wine, and champagne flutes thoroughly before beginning.

    If desired, prepare the sugared pepper rim: pour superfine sugar and ground black pepper onto separate small, flat plates.

    Moisten the rim of each champagne flute by swiping with a lemon wedge, then dip gently into the sugar, followed by the pepper, for a subtle contrast.

    Pour 1/4 cup (2 ounces) of the chilled blood orange juice into each prepared champagne flute.
