    Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.

    In a large bowl, whisk together the flour, baking powder, fine sea salt, rosemary, and thyme.

    Add the cold butter cubes to the flour mixture. Using your fingertips or a pastry blender, cut the butter into the flour until the mixture resembles coarse crumbs.

    Gradually add the cold water, mixing until a shaggy dough forms. Do not overmix.

    Turn the dough out onto a lightly floured surface and gently knead for about 30 seconds, just until it comes together.

    Divide the dough into two equal portions. Roll out each portion very thinly, to about 1/16-inch thickness, into a rectangle.

    Using a pizza cutter or sharp knife, cut the dough into roughly 2x2 inch squares or desired shapes.

    Carefully transfer the cut wafers to the prepared baking sheets, leaving a little space between each.
