Wandering Wizard's Whimsical Wafers
These savory crackers are a delightful illusion, appearing simple at first glance but bursting with unexpected flavors. Perfect for a light lunch or snack, they're surprisingly robust and pair wonderfully with a simple cheese or dip. The subtle herbs and flaked salt give them a well-traveled taste.

Directions
- 1
Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
- 2
In a large bowl, whisk together the flour, baking powder, fine sea salt, rosemary, and thyme.
- 3
Add the cold butter cubes to the flour mixture. Using your fingertips or a pastry blender, cut the butter into the flour until the mixture resembles coarse crumbs.
- 4
Gradually add the cold water, mixing until a shaggy dough forms. Do not overmix.
- 5
Turn the dough out onto a lightly floured surface and gently knead for about 30 seconds, just until it comes together.
- 6
Divide the dough into two equal portions. Roll out each portion very thinly, to about 1/16-inch thickness, into a rectangle.
- 7
Using a pizza cutter or sharp knife, cut the dough into roughly 2x2 inch squares or desired shapes.
- 8
Carefully transfer the cut wafers to the prepared baking sheets, leaving a little space between each.
- 9
Prick each wafer a few times with a fork to prevent puffing and sprinkle generously with flaky sea salt.
- 10
Bake for 12-15 minutes, or until golden brown and crisp. Keep an eye on them as they can brown quickly.
- 11
Remove from the oven and let cool completely on a wire rack before serving. Store in an airtight container.
