Inspired by the garden setting where our hero dreams big, this vibrant gazpacho is a refreshing and speedy delight. It's packed with fresh, summery flavors and delivers a cool, invigorating burst with every bite, perfect for a fuel-up before any big race.

Directions
- 1
Combine chopped tomatoes, cucumber, green bell pepper, red onion, and garlic in a large blender or food processor.
- 2
Add tomato juice, olive oil, red wine vinegar, salt, black pepper, and cayenne pepper (if using).
- 3
Blend on high until the mixture is smooth. For a chunkier gazpacho, pulse until desired consistency is reached, leaving some small pieces of vegetables.
- 4
Taste and adjust seasonings as needed, adding more salt, pepper, or vinegar if desired.
- 5
Pour the gazpacho into a large pitcher or bowl, cover, and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and chill thoroughly.
- 6
Before serving, give the gazpacho a good stir. Ladle into individual bowls.
- 7
Garnish each serving with a few fresh basil leaves. Serve cold.
