These delightful, pillowy steamed dumplings are as light and airy as a cloud and burst with colorful vegetable fillings. Divide the flour into three equal portions. For red dough, mix one portion with hot water and beet purée until a shaggy dough forms, then knead until smooth, about 5 minutes. Repeat with spinach purée for green dough, and plain hot water for white dough. Cover and let rest for 30 minutes.

While dough rests, prepare the filling: combine chopped cabbage, grated carrots, minced shiitake mushrooms, soy sauce, sesame oil, ginger, and white pepper in a bowl. Mix thoroughly.

On a lightly floured surface, roll out each dough color to a thin sheet, about 1/16-inch thick. Using a 3-inch round cutter, cut out circles.

Place a teaspoon of filling in the center of each dough circle. Fold the dough in half to form a crescent, sealing the edges by pinching and crimping to create pleats.
