
Troll Market "Meat" Balls
These hearty, flavorful meatballs are a satisfying centerpiece to any meal, whether nestled in a rich tomato sauce or served on their own. They're robust and comforting, just like a gathering of trusted friends in a hidden market.

In a large bowl, combine the ground beef, Parmesan cheese, parsley, minced garlic, beaten egg, breadcrumbs, milk, salt, black pepper, and red pepper flakes (if using).

Gently mix with your hands until just combined, being careful not to overmix, which can make the meatballs tough.

Form the mixture into golf-ball sized meatballs, about 1 1/2 inches in diameter. You should get approximately 20-24 meatballs.

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Working in batches, carefully place the meatballs into the hot oil and sear on all sides until nicely browned. This step builds flavor and color.

Once all meatballs are seared, return them all to the pot. Pour in the crushed tomatoes, add the bay leaf and dried oregano.
