
Igor's Inventive Goo-lash
A delightfully savory and slightly unusual stew, perfect for a chilly evening or an adventurous palate. This 'goo-lash' combines tender beef with root vegetables and a surprising hint of sweetness, all simmered in a rich, deeply flavored broth until wonderfully soft and melded.

In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium-high heat.

Season beef cubes generously with salt and pepper. Brown beef in batches on all sides, ensuring not to overcrowd the pot. Remove browned beef and set aside.

Add chopped onion to the pot and cook until softened, about 5-7 minutes. Stir in minced garlic, smoked paprika, and thyme, cooking for 1 minute until fragrant.

Deglaze the pot with red wine, scraping up any browned bits from the bottom. Let it reduce by half.

Return the beef to the pot. Add beef broth, diced tomatoes, carrots, parsnips, and golden raisins. Bring to a simmer.

Reduce heat to low, cover, and let the goo-lash simmer for 2 to 2.5 hours, or until the beef is fork-tender and vegetables are soft.

Stir in apple cider vinegar and season with additional salt and pepper to taste. Cook for another 10 minutes, uncovered, to allow flavors to meld.
