    In a large bowl, combine the corn kernels, flour, cornmeal, egg, buttermilk, diced poblano, red onion, baking powder, salt, pepper, and cilantro. Mix until just combined; do not overmix.

    In a small bowl, whisk together the honey and lime juice until well combined. Set aside.

    Heat 1/2 inch of vegetable oil in a large skillet or cast iron pan over medium-high heat until it shimmers (approximately 350°F / 175°C).

    Drop spoonfuls (about 2 tablespoons each) of the batter into the hot oil, flattening them slightly with the back of the spoon.

    Cook for 3-4 minutes per side, or until golden brown and cooked through. Be sure to cook in batches, not overcrowding the pan.
