Journey's End Golden Corn & Poblano Fritters with Honey-Lime Drizzle
These vibrant fritters capture the spirit of discovery with their golden hue and a kick of poblano pepper. Sweet corn, spicy pepper, and a bright honey-lime drizzle create a symphony of flavors, perfect for a celebratory breakfast or a light lunch. They’re hearty enough to fuel any grand adventure.

Directions
- 1
In a large bowl, combine the corn kernels, flour, cornmeal, egg, buttermilk, diced poblano, red onion, baking powder, salt, pepper, and cilantro. Mix until just combined; do not overmix.
- 2
In a small bowl, whisk together the honey and lime juice until well combined. Set aside.
- 3
Heat 1/2 inch of vegetable oil in a large skillet or cast iron pan over medium-high heat until it shimmers (approximately 350°F / 175°C).
- 4
Drop spoonfuls (about 2 tablespoons each) of the batter into the hot oil, flattening them slightly with the back of the spoon.
- 5
Cook for 3-4 minutes per side, or until golden brown and cooked through. Be sure to cook in batches, not overcrowding the pan.
- 6
Transfer the cooked fritters to a wire rack lined with paper towels to drain excess oil.
- 7
Serve the fritters warm, drizzled generously with the honey-lime sauce. A dollop of sour cream or Greek yogurt can be a delightful addition.
