Directions

  1. 1

Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line with parchment paper.

  2. 2

In a large bowl, combine the ground beef, breadcrumbs, chopped yellow onion, beaten egg, 2 tablespoons ketchup, Worcestershire sauce, garlic powder, dried thyme, salt, and pepper.

  3. 3

Mix gently with your hands until just combined – be careful not to overmix, as this can make the meatloaf tough.

  4. 4

Divide the mixture into 6 equal portions. Shape each portion into an oval or mini-loaf shape, about 3-4 inches long, and place them on the prepared baking sheet.

  5. 5

In a small bowl, whisk together the remaining ketchup (about 1/4 cup), apple cider vinegar, and brown sugar to create the glaze.

  6. 6

Spoon or brush a generous amount of the glaze over the top of each mini meatloaf.

  7. 7

Bake for 25-30 minutes, or until the internal temperature reaches 160°F (71°C) on a meat thermometer and the glaze is caramelized.

  8. 8

Remove from the oven and let rest for 5 minutes before serving for the juices to redistribute. Enjoy with your favorite sides.
