Stir in the crushed tomatoes, tomato sauce, water, parsley, oregano, salt, and pepper. Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally.

While the sauce simmers, in a medium bowl, combine the ricotta cheese, egg, and 1/4 teaspoon salt. Mix well.
