
Mr. Wolf's Clever Canine Con Carne
A heartier, more sophisticated take on a classic, this chili con carne is slow-simmered to perfection, developing rich, complex flavors. It’s hearty enough for a pack and full of unexpected depths, just like a clever plan coming together. Excellent for cooler evenings.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Add chopped onion and red bell pepper to the pot. Cook, stirring occasionally, until softened, about 5-7 minutes.

Stir in minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.

Pour in the crushed tomatoes, kidney beans, black beans, and beef broth, stirring to combine.

Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, or up to 2-3 hours for deeper flavor, stirring occasionally.
