Directions

  1. 1

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

  2. 2

Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

  3. 3

Add chopped onion and red bell pepper to the pot. Cook, stirring occasionally, until softened, about 5-7 minutes.

  4. 4

Stir in minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.

  5. 5

Pour in the crushed tomatoes, kidney beans, black beans, and beef broth, stirring to combine.

  6. 6

Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, or up to 2-3 hours for deeper flavor, stirring occasionally.

  7. 7

During the last 15 minutes of cooking, stir in the unsweetened cocoa powder. This adds a wonderful depth and richness without making it taste like chocolate.

  8. 8

Season with salt and freshly ground black pepper to taste. Adjust spices as needed.

  9. 9

Serve hot with your favorite toppings like shredded cheese, sour cream, or chopped fresh cilantro.
