In a medium saucepan, whisk together the coconut milk, water, cornstarch, maple syrup, turmeric, ginger, cinnamon, and black pepper until the cornstarch is fully dissolved and there are no lumps.

Place the saucepan over medium heat, stirring constantly with a whisk. Continue to stir as the mixture begins to thicken, preventing it from sticking to the bottom.

Bring the mixture to a gentle boil, then reduce the heat to low and continue to cook, stirring, for 1-2 minutes until it becomes very thick and pudding-like. It should coat the back of a spoon thickly.

Remove the saucepan from the heat and stir in the vanilla extract.

Pour the warm pudding into four individual ramekins or small dessert bowls. The surface may develop a thin skin if not covered.
