Heat olive oil in a large, heavy-bottomed skillet or cast iron pan over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove sausage with a slotted spoon and set aside, reserving about 1 tablespoon of drippings in the skillet.

Add the diced onion to the skillet and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Add the diced potatoes to the skillet, spread them in an even layer, and cook undisturbed for 5-7 minutes until a deep golden crust forms on one side. Stir and cook for another 5 minutes.
