
Wild Mustanger's Trail Mix Bars

Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides.

In a large bowl, combine oats, rice crispy cereal, chopped nuts, dried fruit, shredded coconut, and flax seeds. Mix well.

In a microwave-safe bowl, combine honey (or maple syrup), peanut butter, and coconut oil. Microwave on high for 30-60 seconds, or until mixture is smooth and easily stirred.

Remove from microwave and stir in vanilla extract and a pinch of salt.

Pour the wet mixture over the dry ingredients. Stir thoroughly until all dry ingredients are evenly coated.

Transfer the mixture to the prepared baking dish. Press down very firmly and evenly with the back of a spoon or your hands to compact the mixture.

Refrigerate for at least 1 hour, or until firm.

Once firm, use the parchment paper overhang to lift the block out of the pan. Cut into 8-10 bars.

Store bars in an airtight container at room temperature for up to 5 days, or in the refrigerator for up to 2 weeks.
