Morning Pasture Pancake Stack with Berry Compote
A comforting and hearty breakfast that fuels a day of activity at the academy. Fluffy buttermilk pancakes are stacked high and topped with a warm, sweet berry compote, reminiscent of foraging for delicious treats in lush pastures. It's a classic dish designed to bring a smile to anyone's face.

Directions
- 1
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- 2
In a separate medium bowl, whisk together the buttermilk, egg, and 3 tablespoons of melted butter.
- 3
Pour the wet ingredients into the dry ingredients. Stir just until combined; do not overmix. A few lumps are fine.
- 4
Heat a griddle or large non-stick skillet over medium-low heat. Lightly grease with butter.
- 5
For each pancake, pour about 1/4 cup of batter onto the hot griddle.
- 6
Cook for 2-3 minutes per side, or until golden brown and cooked through, flipping once bubbles appear on the surface.
- 7
While pancakes are cooking, prepare the berry compote: In a small saucepan, combine the mixed berries and maple syrup.
- 8
Simmer over medium heat for 5-7 minutes, stirring occasionally, until the berries have softened and the sauce has thickened slightly.
- 9
Stack the cooked pancakes on plates and generously spoon the warm berry compote over the top.
- 10
Serve immediately with additional maple syrup if desired, for a truly satisfying academy-style breakfast.
