Desert Trail Dust Steak Skewers with Smoky Pepper Glaze
Hearty and flavorful beef skewers inspired by the robust spirit of the open desert. Marinated in a blend of spices and basted with a smoky, slightly sweet glaze, these skewers are perfect for grilling over an open flame or under a broiler. They reflect the resilience and warmth of the academy's adventurous life.

Directions
- 1
In a medium bowl, combine the beef cubes, olive oil, smoked paprika, garlic powder, and cayenne pepper. Toss to coat evenly.
- 2
Thread the beef, red bell pepper, green bell pepper, and red onion alternately onto the soaked wooden skewers.
- 3
Preheat a grill to medium-high heat (about 375-400°F). If using a broiler, preheat to high with a rack about 6 inches from the heat source.
- 4
In a small saucepan, whisk together the barbecue sauce, apple cider vinegar, and molasses. Heat gently over low heat until warmed through, stirring occasionally.
- 5
Place the skewers on the preheated grill or broiler pan. Cook for 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness.
- 6
During the last 3-4 minutes of cooking, brush the skewers generously with the prepared smoky pepper glaze.
- 7
Continue to cook, turning and basting, until the glaze is slightly caramelized and sticky.
- 8
Remove the skewers from the grill or broiler and let rest for 5 minutes before serving.
- 9
Serve hot, perhaps with a side of academy-style wild rice or a fresh green salad.
