Inspired by the powerful, glowing gems sought after by both heroes and villains, this vibrant chili combines the rich flavors of a hearty beef stew with a surprising pop of color from green bell peppers and cilantro. It's a comforting, substantial meal perfect after a long day of adventuring.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
