Directions

  1. 1

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.

  2. 2

Add diced yellow onion to the pot and cook until softened, about 5-7 minutes.

  3. 3

Stir in minced garlic, chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.

  4. 4

Pour in the crushed tomatoes, kidney beans, black beans, diced green bell pepper, and beef broth.

  5. 5

Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 2 hours, stirring occasionally. The longer it simmers, the richer the flavors will become.

  6. 6

Taste and season with salt and freshly ground black pepper as needed.

  7. 7

Ladle the chili into bowls. Garnish generously with fresh chopped cilantro before serving.

  8. 8

Serve hot with your favorite toppings like shredded cheese, sour cream, or cornbread.
