Bring a large pot of salted water to a rolling boil. Add the tagliatelle and cook according to package directions until al dente.

While the pasta cooks, heat olive oil in a large skillet or Dutch oven over medium heat.

Add the diced onion and cook until softened and translucent, about 5-7 minutes.

Stir in the minced garlic and red pepper flakes (if using), and cook for another minute until fragrant.

Pour in the crushed tomatoes and red wine. Add the dried oregano, salt, and pepper.

Reduce heat to low, cover, and simmer for at least 20 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Drain the cooked pasta, reserving about 1/2 cup of the pasta water.
