Directions

    Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

    In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

    In a separate medium bowl, whisk together egg, buttermilk, vegetable oil, and vanilla extract.

    Add green food coloring, starting with a few drops and adding more until desired vibrant green color is achieved.

    Pour the wet ingredients into the dry ingredients. Stir just until moistened; do not overmix. A few lumps are fine.

    Gently fold in the mini semi-sweet chocolate chips.

    Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.

    Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
