    In a small saucepan, combine mixed berries, 2 tablespoons granulated sugar, and lemon juice. Cook over medium heat for 5-7 minutes, until berries soften and release their juices. Mash lightly with a fork.

    Strain the berry mixture through a fine-mesh sieve into a bowl, pressing gently to extract all liquid. Discard solids. Let the berry coulis cool.

    In a small bowl, sprinkle gelatin powder over cold water. Let stand for 5 minutes, until bloomed.

    Heat the bloomed gelatin in the microwave for 10-15 seconds, or until completely dissolved and clear. Stir into the cooled berry coulis.

    In a large cold bowl, whip heavy cream, vanilla extract, and remaining 2 tablespoons granulated sugar until soft peaks form.
