
Sandman's Golden Dream Cookies
These delicate, buttery shortbread cookies are infused with a hint of lemon and dusted with golden sugar, reminiscent of the Sandman's shimmering dream dust. In a large bowl, cream together the softened butter, granulated sugar, and salt until light and fluffy.

Gradually add the all-purpose flour, mixing on low speed until just combined and a soft dough forms. Do not overmix.

Turn the dough out onto a lightly floured surface and gently press it into a disk. You can roll the dough to about 1/2-inch thickness or simply shape into a log.

For traditional shortbread rectangles, cut the dough into 1 1/2-inch by 3/4-inch pieces. For round cookies, use a small cookie cutter.
