Directions
- 1
Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- 2
Add chicken pieces and sear until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- 3
Add onion, carrots, and celery to the pot. Sauté until softened, about 8-10 minutes.
- 4
Stir in minced garlic, dried thyme, and smoked paprika. Cook for another minute until fragrant.
- 5
Pour in chicken broth and crushed tomatoes. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
- 6
Return browned chicken to the pot. Add cubed potatoes. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 20 minutes.
- 7
Uncover and continue to simmer for another 10-15 minutes, or until chicken is cooked through and potatoes are tender.
- 8
Stir in frozen peas and cook for 2-3 minutes more, until heated through.
- 9
Season generously with salt and freshly ground black pepper. Garnish with fresh chopped parsley before serving hot.
