    Melt butter in a large cast-iron skillet over medium-high heat.

    Add crumbled breakfast sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage with a slotted spoon and set aside, reserving some drippings in the skillet.

    Add chopped onion to the skillet and cook until softened, about 3-4 minutes.

    Stir in diced bell peppers and continue to cook for another 5 minutes, until tender-crisp.

    Add diced potatoes to the skillet. Cook, stirring occasionally, until potatoes are tender and golden brown, about 15-20 minutes.

    Stir in dried oregano, smoked paprika, salt, and pepper. Return the cooked sausage to the skillet and mix everything together.

    Create 6 small wells in the skillet mixture. Crack an egg into each well.
