TJ's Prankster Pizza Pockets
These delightful, oven-baked pockets are perfect for a quick lunch or an after-school snack. Filled with classic pizza flavors, they're individual, portable, and ideal for trading with friends on the playground. Just like TJ's ingenious plans, they're simple, satisfying, and always a hit.

Directions
- 1
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2
Unroll the pizza dough onto a lightly floured surface. Using a knife or pizza cutter, divide the dough into 8 equal rectangles.
- 3
In a small bowl, combine the marinara sauce, mozzarella cheese, pepperoni, Parmesan cheese, oregano, garlic powder, and red pepper flakes (if using). Stir to combine all ingredients evenly.
- 4
Spoon about 2 tablespoons of the filling onto one half of each dough rectangle, leaving a small border around the edges.
- 5
Fold the other half of the dough over the filling to create a pocket. Press the edges firmly to seal, then crimp with a fork to ensure a tight seal and an attractive finish.
- 6
Transfer the sealed pizza pockets to the prepared baking sheet. Using a sharp knife, make 2-3 small slits on top of each pocket to allow steam to escape.
- 7
Brush the tops of the pockets with the melted butter. This will help them turn golden brown.
- 8
Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. The exterior should appear crisp.
- 9
Allow the pizza pockets to cool for a few minutes before serving. They are best served warm.
