Directions

    Lightly oil 6 individual ramekins or small dessert molds. Set aside.

    In a medium saucepan, combine the coconut milk, sugar, vanilla extract, and salt. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is warm but not boiling. Remove from heat.

    In a small bowl, sprinkle the gelatin over the cold water. Let it sit for 5 minutes to bloom (soften and absorb the water).

    Add the bloomed gelatin to the warm coconut milk mixture, whisking constantly until the gelatin is completely dissolved and no lumps remain.

    Carefully pour the mixture into the prepared ramekins or molds, dividing it evenly.

    Cover each ramekin with plastic wrap and refrigerate for at least 4 hours, or until completely set. For best results, chill overnight.

    To serve, gently run a thin knife around the edge of each panna cotta to loosen it. Invert onto a serving plate.

    If the panna cotta doesn't release easily, dip the bottom of the mold briefly in warm water.
