Directions

  1. 1

In a medium bowl, combine chicken pieces with soy sauce and cornstarch. Toss to coat and set aside to marinate for at least 10 minutes.

  2. 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering.

  3. 3

Add the marinated chicken to the hot skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

  4. 4

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli florets and red bell pepper, stirring constantly for 3-4 minutes until vegetables are crisp-tender.

  5. 5

Add snap peas, minced garlic, and grated ginger to the skillet. Cook for another 1-2 minutes until fragrant.

  6. 6

Return the cooked chicken to the skillet. In a small bowl, whisk together chicken broth and honey, then pour over the chicken and vegetables.

  7. 7

Bring the sauce to a simmer and cook, stirring occasionally, until it thickens slightly and coats the ingredients, about 2-3 minutes.

  8. 8

Remove from heat and serve immediately over hot white rice.

  9. 9

Garnish with a sprinkle of sesame seeds, if desired, for an extra touch of flavor and visual appeal.
