Inspired by the celestial origins and quick movements, this stir-fry is a vibrant, easy weeknight meal, perfect for a family on the go. The blend of crisp vegetables and tender protein offers a balanced, flavorful dish that comes together faster than an alien spacecraft.

In a medium bowl, combine chicken pieces with soy sauce and cornstarch. Toss to coat and set aside to marinate for at least 10 minutes.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until shimmering.
