    Preheat oven to 375°F (190°C). Grease four 6-ounce ramekins generously with butter, then coat them evenly with granulated sugar, tapping out any excess. Place ramekins on a baking sheet.

    In a small saucepan, melt 4 tablespoons butter over medium heat. Stir in flour and cook, stirring constantly, for 1 minute to form a roux.

    Gradually whisk in the warm milk until smooth and thickened. Continue to cook for another 2 minutes, stirring, until the mixture is very thick and smooth. Remove from heat and stir in vanilla extract.

    Whisk egg yolks into the warm milk mixture one at a time until thoroughly combined. Set aside.

    In a clean, dry bowl, beat egg whites with cream of tartar and a pinch of salt using an electric mixer on medium speed until soft peaks form. Gradually add the remaining 1/4 cup granulated sugar, continuing to beat on high speed until stiff, glossy peaks form (do not overbeat).

    Gently fold about one-third of the egg whites into the yolk mixture to lighten it. Then, carefully fold in the remaining egg whites in two additions, being careful not to deflate the mixture. The goal is to incorporate the whites fully while maintaining as much air as possible.

    Divide the soufflé mixture evenly among the prepared ramekins. Smooth the tops with a spatula.

    Place the baking sheet with ramekins into the preheated oven. Bake for 18-22 minutes, or until the soufflés are puffed, golden brown, and have a slight wobble when gently shaken.

    Serve immediately, dusted with powdered sugar. They will begin to deflate quickly, so present them as soon as they come out of the oven.
