Directions

    In a medium saucepan, combine water, butter, 2 tablespoons granulated sugar, and salt. Bring to a rolling boil over medium-high heat.

    Remove the saucepan from the heat and immediately add the flour. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

    Return the pan to low heat and cook, stirring constantly, for 1-2 minutes to dry out the dough slightly.

    Transfer the dough to a large bowl. Add the egg and vanilla extract. Beat with an electric mixer on medium speed until well combined and the dough is smooth and glossy.

    In a shallow dish, combine 1/2 cup granulated sugar and ground cinnamon for the coating. Set aside.

    Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat to 350°F (175°C). Use a candy thermometer to monitor the temperature.
