    Add diced chorizo and cook until browned and crispy, about 5-7 minutes. Remove chorizo with a slotted spoon and set aside, reserving about 1 tablespoon of rendered fat in the skillet.

    Stir in minced garlic, smoked paprika, and red pepper flakes (if using) and cook for another minute until fragrant.
