Directions
- 1
Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat.
- 2
Add diced chorizo and cook until browned and crispy, about 5-7 minutes. Remove chorizo with a slotted spoon and set aside, reserving about 1 tablespoon of rendered fat in the skillet.
- 3
Add chopped onion and bell pepper to the skillet and cook until softened, about 8-10 minutes.
- 4
Stir in minced garlic, smoked paprika, and red pepper flakes (if using) and cook for another minute until fragrant.
- 5
Pour in diced tomatoes (with their liquid) and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- 6
Stir in the rinsed cannellini beans and return the cooked chorizo to the skillet. Season with salt and pepper.
- 7
Reduce heat to low, cover, and simmer for 15-20 minutes, allowing the flavors to meld and the sauce to thicken slightly. If the sauce is too thin, uncover and simmer for an additional 5-10 minutes.
- 8
Taste and adjust seasoning as needed.
- 9
Garnish with fresh chopped parsley before serving. Serve hot with crusty bread for dipping.
