
Tanuki's Terrific Transformation Mochi
These delightful, chewy rice cakes, filled with sweet red bean paste, are a tribute to the shape-shifting forest dwellers. A surprisingly simple sweet treat that offers a taste of traditional flavors.

In a medium bowl, combine the glutinous rice flour and granulated sugar.

Gradually add 3/4 cup warm water to the flour mixture, stirring constantly until a soft, pliable dough forms. It should be slightly sticky but manageable. Add more water, a teaspoon at a time, if too dry.

Divide the dough into 8-10 equal pieces. Flatten each piece into a small disc, about 2 inches in diameter.

Place a teaspoon of sweet red bean paste in the center of each disc.

Carefully fold the edges of the dough over the filling and pinch them together to seal, forming a round ball.

Line a bamboo steamer basket with parchment paper. Place the mochi balls in the steamer, ensuring they do not touch each other.

Steam over boiling water for 10-12 minutes, or until the mochi appears translucent and slightly puffed. The texture should be soft and elastic.

While still warm, transfer the mochi to a surface dusted generously with potato starch (or corn starch) to prevent sticking. Gently roll each mochi to coat evenly.
