    In a large roasting pan or on a large baking sheet, combine the sausage pieces, bell pepper strips, red onion wedges, and quartered potatoes.

    Add the minced garlic, olive oil, dried oregano, dried basil, and red pepper flakes (if using) to the pan.

    Season generously with salt and freshly ground black pepper. Toss everything together until the vegetables and sausage are evenly coated.
