Directions

    In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

    Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix. Form the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

    Preheat oven to 375°F (190°C). Lightly grease six 4-inch tart pans with removable bottoms.

    On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out six circles large enough to fit into the tart pans, with a slight overhang.

    Gently press the dough into the tart pans. Trim any excess dough. Prick the bottom of each crust several times with a fork.

    In a medium bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, and lemon zest. Toss gently to coat the berries.
