Fairy's Wishful Blue Berry Tarts
Inspired by the magical wish-granting presence, these individual tarts feature a vibrant blue filling made from fresh blueberries, nestled in a flaky, golden crust. A touch of lemon brightens the flavors, making each bite feel like a little piece of enchantment. Perfect for a whimsical dessert.

Directions
- 1
In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
- 2
Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix. Form the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
- 3
Preheat oven to 375°F (190°C). Lightly grease six 4-inch tart pans with removable bottoms.
- 4
On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out six circles large enough to fit into the tart pans, with a slight overhang.
- 5
Gently press the dough into the tart pans. Trim any excess dough. Prick the bottom of each crust several times with a fork.
- 6
In a medium bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, and lemon zest. Toss gently to coat the berries.
- 7
Divide the blueberry mixture evenly among the prepared tart shells.
- 8
Brush the edges of the tart crusts with the beaten egg wash.
- 9
Bake for 30-35 minutes, or until the crust is golden brown and the blueberry filling is bubbly and tender to a gentle poke. If the crust edges brown too quickly, you can cover them with foil.
- 10
Remove from oven and let the tarts cool completely on a wire rack before carefully removing them from their pans. Serve at room temperature.
