
Agent P's Platypus Power Pancakes
These vibrant, fluffy pancakes are inspired by a certain semi-aquatic egg-laying mammal of action. Their bright color and delicious flavor will energize you for a day full of big ideas and even bigger contraptions, or just a lazy morning. They're surprisingly simple to make, perfect for any undercover agent, or aspiring inventor.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined and lump-free.

In a separate medium bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.

Add the blue food coloring to the wet ingredients and whisk until the color is evenly distributed and vibrant.

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. A few small lumps are acceptable; do not overmix.
