Captain Hook's Crocodile "Tick-Tock" Chicken and Vegetable Skewers
Beware the ticking clock! These savory chicken and vegetable skewers are a main course that's as bold and flavorful as the captain himself, but far less menacing. Marinated chicken and vibrant peppers, onions, and zucchini are grilled to perfection, offering a balanced and impressive meal that’s fun to assemble and delicious to devour.

Directions
- 1
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- 2
In a medium bowl, whisk together the olive oil, soy sauce, honey, apple cider vinegar, minced garlic, dried oregano, and black pepper to create the marinade.
- 3
Add the cubed chicken to the marinade and toss to coat thoroughly. Allow to marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.
- 4
Preheat grill to medium-high heat (375-400°F / 190-200°C).
- 5
Thread the marinated chicken and cut vegetables alternately onto the soaked skewers, ensuring a mix of colors and textures on each. Do not overcrowd the skewers.
- 6
Lightly oil the grill grates to prevent sticking.
- 7
Place the skewers on the preheated grill. Grill for 10-15 minutes, turning every 2-3 minutes, until the chicken is cooked through and the vegetables are tender-crisp with nice char marks. Ensure internal temperature of chicken reaches 165°F (74°C).
- 8
Remove from grill and let rest for a few minutes before serving.
- 9
Serve these delightful skewers with a side of rice or a fresh green salad for a complete and satisfying meal. The vibrant colors make for a truly appealing presentation that even the most dastardly pirate would appreciate.
- 10
For an extra layer of flavor, brush with a little extra marinade during the last few minutes of grilling. Be sure to cook off any raw marinade thoroughly.
