
Glinda's Golden Glaze Chicken with Emerald City Couscous
Inspired by the splendor and magic of the good witch's domain, this dish features perfectly roasted chicken bathed in a sweet and tangy golden glaze, served alongside vibrant, herbaceous couscous. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Pat the chicken breasts dry with paper towels. Season generously with salt and pepper.

In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, smoked paprika, and 1 tablespoon of olive oil to form the golden glaze.

Place the seasoned chicken breasts on the prepared baking sheet. Brush half of the glaze over the chicken.

Roast for 15 minutes, then flip the chicken and brush with the remaining glaze. Continue to roast for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through and lightly caramelized.

While the chicken roasts, prepare the couscous. Bring the vegetable broth to a boil in a small saucepan. Stir in the instant couscous, cover, and remove from heat. Let stand for 5 minutes.
