Directions

  1. 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. 2

Pat the chicken breasts dry with paper towels. Season generously with salt and pepper.

  3. 3

In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, smoked paprika, and 1 tablespoon of olive oil to form the golden glaze.

  4. 4

Place the seasoned chicken breasts on the prepared baking sheet. Brush half of the glaze over the chicken.

  5. 5

Roast for 15 minutes, then flip the chicken and brush with the remaining glaze. Continue to roast for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through and lightly caramelized.

  6. 6

While the chicken roasts, prepare the couscous. Bring the vegetable broth to a boil in a small saucepan. Stir in the instant couscous, cover, and remove from heat. Let stand for 5 minutes.

  7. 7

Fluff the couscous with a fork. Stir in the remaining 1 tablespoon of olive oil, fresh parsley, fresh mint, chopped pistachios, and lemon juice. Season with salt and pepper to taste.

  8. 8

Slice the roasted chicken and serve immediately alongside the emerald city couscous.

  9. 9

Garnish with additional fresh herbs if desired for an extra pop of color and flavor.
