Directions
- 1
Cook the noodles according to package directions. Drain and set aside.
- 2
Heat sesame oil in a large pot or wok over medium-high heat. Add the ground meat and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
- 3
Add the minced garlic and grated ginger to the pot. Sauté for 1 minute until fragrant.
- 4
Pour in the chicken or vegetable broth, soy sauce, rice vinegar, chili garlic sauce, and sriracha (if using). Bring the mixture to a simmer.
- 5
Add the sliced mushrooms and chopped green onions to the broth. Cook for 3-5 minutes, allowing the flavors to meld and the mushrooms to soften.
- 6
Divide the cooked noodles among serving bowls. Ladle the broth with meat and vegetables over the noodles.
- 7
Halve the soft-boiled eggs and place two halves in each bowl.
- 8
Garnish with additional chopped green onions and a sprinkle of sesame seeds. Serve immediately, adjusting spice level as desired.
