
Papa Knoth's "Revelations" Root Vegetable Hash

In a large, heavy-bottomed skillet, cook the diced bacon over medium heat until crisp. Remove bacon with a slotted spoon, leaving rendered fat in the skillet. Set bacon aside.

Add olive oil to the skillet with the bacon fat (if needed, add more olive oil to ensure about 2 tablespoons of fat). Heat over medium-high heat.

Add the diced Russet potato, sweet potato, and parsnip to the hot skillet. Spread in a single layer and cook undisturbed for 5-7 minutes, until a golden-brown crust forms on the bottom.
