
Barley Lightfoot's Questing Quesadillas

Heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper, and cook until softened, about 5-7 minutes.

Stir in shredded chicken, green chiles, ground cumin, and chili powder. Cook for another 3-5 minutes, allowing the flavors to meld.

Remove the chicken mixture from the skillet and set aside. Wipe the skillet clean.

Place one flour tortilla in the clean skillet over medium heat. Sprinkle about 1/4 cup of the shredded cheese over half of the tortilla.

Spoon about 1/4 cup of the chicken mixture onto the cheesy half of the tortilla, spreading it evenly. Sprinkle with a pinch of fresh cilantro.

Fold the other half of the tortilla over the filling, pressing down gently with a spatula.

Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and bubbly. The internal temperature should register at least 165°F.
