    Preheat your oven to 375°F (190°C). Lightly grease a loaf pan.

    In a large skillet over medium heat, warm the olive oil. Add the chopped onion and cook until softened, about 5 minutes.

    Add the minced garlic and chopped mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms have released their liquid and are browned, about 8-10 minutes.

    In a large bowl, combine the cooked lentils, sautéed onion and mushroom mixture, breadcrumbs, 1/4 cup ketchup, Worcestershire sauce, Dijon mustard, thyme, smoked paprika, salt, and pepper.

    Mix with your hands until well combined and the mixture holds together. Do not overmix.

    Press the mixture firmly into the prepared loaf pan, shaping it evenly.

    In a small bowl, whisk together the remaining ketchup, brown sugar, and apple cider vinegar for the glaze.
