
Mutant Minion's Messy "Meat" Loaf

In a large skillet over medium heat, warm the olive oil. Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and chopped mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms have released their liquid and are browned, about 8-10 minutes.

In a large bowl, combine the cooked lentils, sautéed onion and mushroom mixture, breadcrumbs, 1/4 cup ketchup, Worcestershire sauce, Dijon mustard, thyme, smoked paprika, salt, and pepper.
