Directions

  1. 1

In a large bowl, whisk together 2 cups flour and salt. Cut in cold butter with a pastry blender or your fingertips until pea-sized crumbs form.

  2. 2

Gradually add ice water, 1 tablespoon at a time, mixing until dough just comes together. Divide dough in half, flatten into discs, wrap in plastic, and chill for at least 30 minutes.

  3. 3

Preheat oven to 425°F (220°C). In a large bowl, combine sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss gently to combine.

  4. 4

On a lightly floured surface, roll out one dough disc into a 12-inch circle. Carefully transfer to a 9-inch pie plate.

  5. 5

Pour apple filling into the crust, mounding in the center. Dot with 2 tablespoons of butter (if desired for richer flavor).

  6. 6

Roll out the second dough disc. You can either place it whole over the filling, crimping the edges, or cut into strips to create a lattice top.

  7. 7

Brush the top crust with beaten egg and sprinkle with coarse sugar. Cut several slits in the top crust if not making a lattice, to allow steam to escape.

  8. 8

Bake for 15 minutes at 425°F (220°C). Reduce oven temperature to 375°F (190°C) and bake for an additional 40-50 minutes, or until crust is golden brown and filling is bubbly. If edges brown too quickly, cover with foil.

  9. 9

Let the pie cool on a wire rack for at least 2 hours before slicing and serving. This allows the filling to set properly.
