Declaration of Independence Scrambled Eggs
A robust and satisfying breakfast, much like the pursuit of historical truth. These scrambled eggs, fortified with savory ingredients, will fuel any adventurer's quest for knowledge, or simply a busy morning.

Directions
- 1
In a medium bowl, whisk together eggs, milk or cream, salt, and pepper until just combined – do not overbeat.
- 2
Melt butter in a large non-stick skillet over medium heat.
- 3
Add diced onion and bell pepper to the skillet and cook for 3-5 minutes, until softened.
- 4
Add diced ham or bacon to the skillet and cook for another 2-3 minutes, until slightly crispy.
- 5
Pour the egg mixture into the skillet. Let sit undisturbed for about 30-60 seconds until the edges just begin to set.
- 6
Using a rubber spatula, gently push the cooked egg from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath.
- 7
Continue to gently fold and stir for 3-5 minutes, until the eggs are creamy and set, but still slightly moist. Do not overcook.
- 8
Stir in shredded cheddar cheese until melted and smooth.
- 9
Remove from heat and garnish with chopped fresh chives or parsley before serving immediately.
