Directions

    In a medium bowl, whisk together eggs, milk or cream, salt, and pepper until just combined – do not overbeat.

    Melt butter in a large non-stick skillet over medium heat.

    Add diced onion and bell pepper to the skillet and cook for 3-5 minutes, until softened.

    Add diced ham or bacon to the skillet and cook for another 2-3 minutes, until slightly crispy.

    Pour the egg mixture into the skillet. Let sit undisturbed for about 30-60 seconds until the edges just begin to set.

    Using a rubber spatula, gently push the cooked egg from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath.

    Continue to gently fold and stir for 3-5 minutes, until the eggs are creamy and set, but still slightly moist. Do not overcook.

    Stir in shredded cheddar cheese until melted and smooth.
