
Mulan's 'Make a Man Out of You' Miso Soup

This dashi-based soup, enriched with tender chicken, firm tofu, and earthy mushrooms, is both comforting and deeply flavorful. Combine water and kelp in a large pot. Bring to a simmer over medium heat, then immediately remove the kelp. Do not boil.

Add bonito flakes to the simmering water. Cook for 30 seconds, then remove from heat. Let steep for 5 minutes, then strain the broth through a fine-mesh sieve, discarding the solids.

Return the clear dashi broth to the pot and bring to a gentle simmer over medium-low heat.

Add the thinly sliced chicken breast to the simmering broth. Cook for 3-4 minutes, or until the chicken is cooked through.

Gently stir in the tofu cubes and sliced shiitake mushrooms. Continue to simmer for another 2-3 minutes, allowing the flavors to meld.
