
Emperor's Palace Prosperity Potstickers
These elegant and flavorful potstickers are fit for an emperor, or a warrior deserving of recognition. A delicate wrapper encases a savory filling of ground pork, crisp cabbage, and aromatic spices, pan-fried to golden perfection and then steamed for a tender bite. A vibrant dipping sauce complements the richness, making them an impressive appetizer or a light meal.

In a large bowl, combine the ground pork, shredded cabbage, chopped green onions, grated ginger, 1 tablespoon soy sauce, sesame oil, and white pepper. Mix until just combined, being careful not to overmix.

Place about 1 teaspoon of filling in the center of each dumpling wrapper. Moisten the edges of the wrapper with water.

Fold the wrapper in half to form a half-moon shape. Pinch the center closed, then make small pleats along the top edge of one side, pressing them firmly against the unpleated edge to seal the dumpling completely.

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat until shimmering.

Arrange a single layer of potstickers in the skillet, ensuring they do not touch. Cook for 2-3 minutes, or until the bottoms are golden brown.

Carefully pour 1/2 cup of water into the skillet. Immediately cover with a tight-fitting lid and reduce heat to medium-low. Steam for 8-10 minutes, or until the water has evaporated and the filling is cooked through (internal temperature of 160°F / 71°C).

Remove the lid and increase heat to medium-high for 1 minute to crisp the bottoms again, if desired. Transfer cooked potstickers to a serving platter.

Repeat with remaining potstickers, adding more vegetable oil as needed for each batch.

For the dipping sauce: Whisk together 1/4 cup soy sauce, rice vinegar, and chili garlic sauce (if using) in a small bowl.
