Directions

  1. 1

Gently wash and pat dry all the mixed berries. If using large strawberries, hull and quarter them.

  2. 2

In a medium bowl, combine the berries with the granulated sugar and lemon juice. Stir gently to coat.

  3. 3

If using, add the orange liqueur now. Let the berries sit at room temperature for at least 15-20 minutes to macerate, allowing their juices to release and create a light syrup. Stir occasionally.

  4. 4

While the berries are macerating, prepare the whipped cream. In a large, chilled mixing bowl, combine the cold heavy cream, powdered sugar, and vanilla extract.

  5. 5

Using an electric mixer with a whisk attachment, beat the cream on medium-high speed until soft peaks form. Be careful not to overbeat, or it will become grainy.

  6. 6

To assemble the fool, you can either layer it in individual serving glasses or a larger trifle bowl.

  7. 7

Spoon a layer of whipped cream into the bottom of each glass. Follow with a layer of the macerated berries and some of their syrup.

  8. 8

Repeat the layers, finishing with a generous dollop of whipped cream on top. Feel free to swirl the layers slightly with a spoon for a more artistic look.

  9. 9

Garnish with a few fresh berries and a sprig of mint, if desired.

  10. 10

Serve immediately or chill for up to 2 hours before serving. The longer it sits, the more the cream and berries meld, creating a softer texture.
