In a medium saucepan, combine the granulated sugar and water. Bring to a simmer over medium heat, stirring occasionally until the sugar is completely dissolved. Remove from heat and let cool completely.

Once the sugar syrup has cooled, stir in the strained lemon juice, lime juice, and orange juice.

Add the finely grated lemon zest and lime zest, and a pinch of sea salt. Mix well to combine all ingredients.

Pour the mixture into a shallow freezer-safe container or an ice cream maker bowl.

If using an ice cream maker, follow the manufacturer's instructions for churning sorbet until it reaches a soft-serve consistency.

If not using an ice cream maker, place the container in the freezer. After 1 hour, remove and scrape the partially frozen sorbet with a fork. Repeat this every 30-45 minutes for 3-4 hours, or until fully frozen and flaky.

Transfer the sorbet to an airtight container and freeze for at least 4 hours, or overnight, for a firmer consistency.

Before serving, let the sorbet sit at room temperature for 5-10 minutes to soften slightly. Scoop and serve in chilled bowls.
