Zoological Park's 'It's a Wonderful Life' Waffles
These light and airy waffles, infused with vanilla and a hint of citrus, bring a touch of snowy magic to your holiday breakfast. They're a forgiving recipe, perfect for an unhurried morning, and can be customized with your favorite toppings.

Directions
- 1
Preheat your waffle iron according to the manufacturer's instructions.
- 2
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- 3
In a separate medium bowl, whisk together the egg yolks, milk, melted butter, vanilla extract, and orange zest (if using).
- 4
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
- 5
In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form.
- 6
Gently fold the beaten egg whites into the waffle batter until no streaks of white remain. This makes the waffles extra fluffy.
- 7
Lightly grease the hot waffle iron with cooking spray or melted butter.
- 8
Ladle about 1/2 to 3/4 cup of batter onto the center of the waffle iron (or as much as recommended by your waffle iron's guide).
- 9
Close the lid and cook for 3-5 minutes, or until the waffle is golden brown and crisp.
- 10
Carefully remove the cooked waffle and repeat with the remaining batter.
- 11
Serve immediately with your favorite toppings such as warm maple syrup, fresh berries, or a dusting of powdered sugar.
