Inspired by the loyal, if quirky, hench-bots, this vibrant blue gelato is a refreshing and playful dessert. Its intense berry flavor and smooth texture make it a delightful treat for any occasion, offering a cool contrast to any meal.

Combine milk, heavy cream, sugar, and salt in a medium saucepan over medium heat. Stir constantly until sugar is fully dissolved and the mixture is warm, but not boiling. Remove from heat and stir in vanilla extract.

In a separate bowl, mash the raspberries with lemon juice until a coarse puree forms.

Strain the raspberry puree through a fine-mesh sieve into the cream mixture, pressing firmly on the solids to extract all the juice. Discard the seeds.
