In a large bowl, toss the sweet potato sticks with olive oil, smoked paprika, garlic powder, cayenne pepper (if using), salt, and black pepper until evenly coated.

Arrange the seasoned sweet potato fries in a single layer on the prepared baking sheets, ensuring they are not overcrowded for even crisping.

Roast for 20-25 minutes, flipping them halfway through, until they are tender on the inside and nicely caramelized and crispy on the outside.
