Add chicken pieces to the spice mixture and toss to coat evenly. Drizzle with 1 tablespoon of olive oil and mix again.

Thread chicken pieces onto skewers. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.

While the grill heats, prepare the glaze: In a small saucepan, combine apricot preserves, apple cider vinegar, sriracha, and the remaining 1 tablespoon of olive oil.
