    In a medium bowl, combine smoked paprika, ground cumin, cayenne pepper, garlic powder, ground cinnamon, salt, and black pepper.

    Add chicken pieces to the spice mixture and toss to coat evenly. Drizzle with 1 tablespoon of olive oil and mix again.

    Thread chicken pieces onto skewers. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.

    Preheat a grill or grill pan to medium-high heat (approximately 400°F / 200°C).
