Forest Friends' Feast Skewers with Peanut Drizzle
Inspired by a lively group of animal companions, these colorful and flavorful skewers feature tender chicken, sweet bell peppers, and juicy pineapple, all grilled to perfection. A rich and creamy peanut sauce adds an exotic touch, making it a delicious and family-friendly main course perfect for a fun gathering.

Directions
- 1
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- 2
Prepare the peanut sauce: In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, minced garlic, and grated ginger.
- 3
Gradually whisk in warm water (or coconut milk) until the sauce reaches a smooth, pourable consistency.
- 4
Thread the chicken cubes, bell pepper pieces, and pineapple chunks alternately onto the prepared skewers.
- 5
Preheat your grill to medium-high heat (about 375-400°F / 190-205°C). Lightly oil the grill grates.
- 6
Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp with nice grill marks.
- 7
Alternatively, bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
- 8
Brush some of the peanut sauce onto the skewers during the last few minutes of grilling for extra flavor.
- 9
Serve the grilled skewers immediately, drizzled generously with the remaining peanut sauce.
