
Arctic Operation Fish & Chip Skewers
These delightful skewers combine flaky white fish with crispy potato wedges, inspired by intrepid arctic missions. A vibrant lemon-dill aioli ties it all together, making for a fun and flavorful appetizer that's surprisingly easy to assemble.

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, toss potato wedges with 2 tablespoons olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.

Spread potatoes in a single layer on the prepared baking sheet and roast for 20 minutes.

While potatoes roast, gently thread fish cubes onto the soaked wooden skewers, about 3-4 pieces per skewer.

After 20 minutes, remove potatoes from the oven. Brush fish skewers lightly with olive oil and place them on the baking sheet alongside the potatoes.
